The Creamiest, Cheesiest, and Easiest Potato Soup I Have Ever Made

The title is so true.  It takes 30 minutes and is delicious.


This is what you need:



Your eyes are not playing tricks on you, that is indeed tater tots.  So you allow the tater tots to cook in chicken broth until they crumble up (and looks like the picture below)





Don't skip out on the fresh garlic.  If you are a newbie to mincing garlic here is a video to help you along the way, How to Mince Garlic.


Push down on the garlic to break the cloves apart.


Cut the end off the cloves.  And then I whack my cloves with a pot to help skin them and it doubles as a way to relieve stress.  :)


And just give it all a good chopping.




Add the cheese and butter and give it a good stir.


Then add the onions and garlic.


Next comes the milk and sour cream.



Give it a good stir.  Cover and let it cook for 20 minutes, without allowing it to boil.


I always add bacon to mine.  I know you are thinking that looks amazing.

Cheesy Potato Soup

12 frozen hash brown patties (or a bag of tater tots)
2 16 oz. cans of chicken broth
1 stick of butter
12 slices of American cheese
1 tablespoon of dried onions
1 teaspoon minced garlic
2 cups sour cream
2 cups milk
1 teaspoon salt
1/2 teaspoon of pepper

In a large pot, combine tater tots and chicken broth over medium heat, until they are thawed and crumbled.  Add remaining ingredients and stir until blended.  Cover and cook on low heat for 20 minutes or until soup is hot.  DO NOT BOIL.

  1. i have this cool little tool that i got at target to mince garlic. you stick the garlic clove in the top and roll it. the garlic rolls between the blades, mincing it, and all you have to do is roll it like you're playing with a matchbox car!
