Who doesn't LOVE Oreos?
...and how could you not LOVE a cookie that has Oreos in it?
So go ahead and whip these up. And Enjoy them with a big glass of milk!
This is what you will need.
Mascarpone (Italian Cream Cheese) is the key to these cookies. I found it in the speciality cheese section of my grocery store. If you are unable to find it you can either substitute it with cream cheese or create a sour cream and cream cheese mixture (equal amounts of both)

Cream together the Mascarpone and butter for about 3 minutes.
Beat in the sugar, until the mixture is light and fluffy. Then add the egg yolk and vanilla.
Slowly beat in the flour.
Yes...I created this mess. I still haven't figured out the trick to keeping ALL the flour in the mixing bowl.
Place your Oreos in a bag and give them a good crushing.
Stir them into the cookie dough.
Roll the dough out into balls and place on a greased baking sheet. Cook at 325 degrees for 12-15 minutes.
And always...the last step is to ENJOY!
