So I promised my mother, I would lay off on the muffin making. Well, that lasted a little over a week. Maybe they have twelve step programs for people that are addicted to muffins. Or maybe I should just start a bakery, so I can bake them but not have to eat all of them. Oh well, either way, these were amazing.
Here is what you will need.
First, peel and dice your apple. If you don't have one of these handy tools, you should probably get one. It makes cutting an apple so much easier.
In a bowl, combine your diced apple, apple sauce, apple juice, oat brain, vegetable oil, egg, brown sugar, and maple syrup.
In another bowl, mix together the flour, baking soda, cinnamon, and allspice.
Combine both bowls and mix throughly.
Place in the muffin tin and bake on 375 degrees for about 18 minutes. This should make about 9 muffins.

Apple Muffins
1 small apple, peeled and diced
1/2 cup unsweetened apple sauce
1/8 cup apple juice
1/2 cup oat bran
1/4 cup vegetable oil
1 egg
1/4 cup brown sugar
1/8 cup maple syrup (you can also use molasses)
1/2 cup wheat flour
1/2 cup while flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon allspice
Peel and dice your apple. Combine it with the apple sauce, apple juice, oat bran, vegetable oil, egg, brown sugar, and maple syrup. In a different bowl, combine together the flour, baking soda, cinnamon, and allspice. Blend together the wet and dry ingredients. Scoop into lined muffin pans and bake at 375 degrees for 15-20 minutes.
