Cinnamon Roll Muffins

I know.  I know.  I'm some what obsessed with muffins (not to mention that just about everything I cook these days, has at least a small amount of cinnamon in it).  But they are so easy, quick, and just plain delicious.  You have to give these a try (you won't regret it).



Gather all of your supplies.


Combine the milk, egg, sugar, salt, and oil.


In another bowl, mix together the cinnamon, flour, and baking powder.



Combine both mixtures and prepare your muffin tin.  For this muffin, I don't use the liners (just cover it with a really good layer of non-stick spray). 


It should make twelve muffins.  Stick them in the oven and bake at 350 degrees for 15 to 20 minutes.


While you are waiting, mix together the cinnamon and sugar.  Also melt the butter in a separate bowl.


I like to form something like an "assembly line" (it makes me feel like I'm working in a bakery or something of the sort).




Take each muffin and dip it in the melted butter (allow the muffin to soak up the butter).


Then give each muffin a dip in the cinnamon sugar mixture.


Last step, ENJOY!

Cinnamon Roll Muffins

1 3/4 cups Flour
1 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 teaspoon Cinnamon
1/3 cup Oil
3/4 cup White Sugar
1 Egg
3/4 cup Milk

1/4 cup Butter
1/3 cup White Sugar
1 tablespoon Cinnamon

Combine flour, baking powder, salt, and cinnamon.
Combine oil, sugar, egg, and milk.  Add dry ingredients and stir only to combine.
Bake at 350 degrees for 15-20 minutes.  Meanwhile, melt the butter in a bowl.  Combine the white sugar with the cinnamon in another bowl.
Shake muffins out while still hot.  Dip muffins in butter, then into the cinnamon sugar mixture.  Let cool.
